We purchase the pork belly, put on a rub and tend to it in the fridge for 7 full days, rinse and dry out for 1 more day, then smoke in pellet smoker and slice on commercial slicer. Packaged in 10oz and food saver sealed for freshness and frozen, till your ready to thaw and cook. Just place the bag out or in room temp water for a few minutes and your bacon is ready to cook for any meal. :)
